why do people like to ride there emotions like a roller coaster?
I notice that people seem to use normal feeling like drug. for example we watch scary movies for a fear high and ride roller coasters and drink lots of caffeine for a hyper rush. I've even heard of people that like to be embarrassed for a rush. I've myself doing things like this.

3. want some deep analysis on this {what do you think}
I once listened to a noted Psychiatrist and author at a Conference. His name currently escapes me.
1. He called these people "low gainers". High gainers wake up and are overwhelmed by the beauty of the morning. It takes very little to get their neurochemicals to kick in and make them feel alive. Others have to go to extremes to feel alive. Their neurochemicals aren't produced at a normal rate so they must self stimulate them. It is like the brain is not getting enough oxygen. Maybe that is the problem, but I haven't heard of any research on it. With really low gainers the brain will scream "I'm dying here, do something!" When they are kids they get stimulation when someone yells at them, so they may kick their brother, yank a girl's braid, annoy the teacher, etc. They also can do dangerous things to self stimulate, walking on the fence, jumping from the roof, etc. There are positive ways to reach the same goal, but they aren't always as immediate.
Then, when low gainers are adults they find other ways to self stimulate. Some self medicate with legal or illegal drugs. Other's are thrill seekers or like you mentioned.
Some are diagnosed as having ADHD. The hyperactive component is their way of self stimulating. The attention deficit is the effect of the shortage of neurochemicals.
2. Addicts tend to over indulge. Over indulgence is possible for these people, but I haven't found any studies on actual addiction to over stimulation.
3. You and those closest to you know you best. The first site is funded by the National Institute of Mental Health. The second is about mental disorders/illness. Most start as children, so the best site that webmd could give me is the 2nd one. If you read about the criteria for disorders and you realize, wow that sounds like me, then print it out and ask someone close to you. If they concur, then seek medical help (and bring the printout with everything that describes you circled/highlighted).
